  • 3.4- Breakfast sandwiches were holding at improper temperatures. Sausage muffin 114°F, pancake and sausage sandwich 117°F, waffle and egg sandwich 118°F, and hash browns 114°F. Potentially hazardous foods shall be held at 135°F and above to prevent bacteria growth. Hot holding unit on line may not be functioning properly. Manager will contact company for repair.
  • Note: Unclear what concentration QAC sanitizer is required per manufacturer recommendations. Currently at or above 400 ppm.
  • Manager will check with manufacturer and make any needed adjustments.

  • *4.4 No chlorine residual observed on the final dish machine rinse. Maintain chlorine sanitizer at 50-200ppm in order to effectively sanitize. Manually sanitize in the 3-compartment sink until repairs are made.
  • 6.4 Resurface the rusty beverage walk-in cooler floor in order to provide a more easily cleanable surface.
  • NOTE: When ceiling tile are replaced, provide: non-fissured; smooth; and easily cleanable tiles.
  • -Observed employees wearing single-use gloves to prevent bare hand contact.
  • -PIC knowledgeable of proper thawing procedures.
  • -4 accurate long stem thermometers available for use.
  • -Observed proper cold holding at 41°F or below.
  • -Observed proper cooking temperatures of: potato soup 175°F and tomato soup 169°F.

  • 120°F.
  • Potentially hazardous foods shall cold hold at 41°F and below and shall hot hold at 135°F and above to limit the growth of organisms. The potentially hazardous foods in the refrigerators and in the Cres Cor units were holding at proper temperatures.
  • NOTE: Ceiling tiles are fissured and should be smooth and easily cleanable.
