 12/1/2011Standard2DATE MARKING: No date marking observed on opened hot dogs in the walk-in cooler. Ready-to-eat, potentially hazardous foods (PHFs) shall be dated the day of opening or preparation and used or discarded within 7 days. Discussed with PIC.
HANDWASHING: No paper towels observed at the hand sink beside the ice machine. Maintain hand sinks stocked with soap and paper towels at all times in order to facilitate proper hand washing. PIC replaced the paper towels today.
COLD HOLDING: Observed cheese slices, on the counter, cold holding improperly at 58°F. Maintain PHFs cold holding at 41°F or below in order to limit bacterial growth. PIC returned the cheese slices to the reach-in cooler.

  • *4.4 The chlorine sanitizing solution in the wiping cloth bucket was at 0ppm/ Maintain 50-100ppm chlorine residual.
  • 6.4 The floor below the fryers is soiled. Clean this at a frequency to prevent accumulation.
  • 6.2 The light in the restroom is not working. Replace this. (On order)
  • Note: Cappuccino machine is to be removed, awaiting pick-up.
  • Note: Operation may be seasonal this year TBD.
