  • 6.4 Observed maintenance tools and parts on the three vat sink and on the cases of beer in the side storage room. Relocate tools and parts to a separate area from food storage and the three vat sink.
  • 6.2 Repair the light fixture in the walk-in cooler contains pooling water.
  • 6.1 Observed the light fixture in the bagged ice cooler was lacking a light shield, and in the existing beer walk-in unit. Provide this.
  • 4.0 Provide a cleanable surface under the hamburger buns. Remove the uncleanable card board surface.
  • 6.4 Clean the front window sill which is soiled. Clean this.
  • 3.5 Relocate the price tags covering the sell-by or use-by dates on the food items.
  • 4.5 Clean the door seal on the beer walk-in cooler which is soiled.
  • 4.5 Clean the exterior of the True Coke cooler which is dusty.
  • R/4.4 Repair the 5 of the 8 damaged display door seals on the beer walk-in cooler.
  • NOTE: Observed Stuffing Mix for sale beyond the expiration date of May 18, 2012. Check and rotate stock regularly.
  • Discussed approved sanitizer and test kits with PIC.
  • Operation is adding a Beer cave. Provide this office with a make and model number. Contact appropriate County or City agencies for permits if applicable.
  • GE microwave is for commercial use.

  • The following are repeat violations from the Standard 1 report dated 6/1/11:
  • *3.2 Observed the following raw animal foods stored improperly in the retail cooler:
  • -raw shell eggs stored above and beside ready-to-eat foods
  • -raw bacon stored above and beside ready-to-eat foods
  • Store raw animal foods separate from and below ready-to-eat foods in order to prevent possible cross-contamination.
  • *4.4/5.1 The 3-compartment sink has been removed from the operation. However, open beef jerky in plastic containers with tongs are being used. Observed 1 plastic container above the back handsink. Provide a 3-compartment sink in order to wash, rinse, and sanitize equipment; use disposable equipment; or sell only pre-packaged jerky. Contact MCHD prior to any plumbing work in order to obtain any necessary permits. Food contact surfaces shall be washed, rinsed, and sanitized and clean to the sight and touch.

  • *2.4/6.2 No paper towels observed at the back handsink or the restroom handsink. Maintain handsinks stocked with soap and paper towels at all times in order to facilitate proper hand washing.

  • -Walk-in cooler, containing potentially hazardous foods, was cold holding properly below 41°F.

  • 4.4 The following equipment was damaged:
  • -R/Several torn door seals on the beer cooler doors
  • Equipment shall be maintained in a state of good repair.
  • 6.4 The following areas were damaged:
  • -R/Damaged flooring surrounding the beer walk-in cooler door.
  • -R/Tape on the floor the beer walk-in cooler entrance
  • -Damaged flooring in various areas of the operation
  • Repair the flooring in order to provide a cleanable surface.
  • 6.1 Observed 1 unshielded light bulb in the walk-in cooler. Provide a light shield or a shatter-proof light bulb.
  • 3.2 Observed a box of beef sticks and a box of eggs on the walk-in cooler floor. Store food 6 inches above the floor in order to prevent possible contamination.
  • 6.4 The following areas need cleaned:
  • -floor below the walk-in cooler shelving
  • -floor below walk-in beer cooler shelving
  • Physical facilities shall be maintained clean.
  • 4.5 Observed 2 dusty condenser fan covers in the walk-in beer cooler. Clean this.
  • 3.1/3.2 Observed one damaged Drumstick and one damaged/exposed Drumstick in the ice cream freezer. Packages shall be intact and protect the contents inside from possible contamination. Discard any food that may become contaminated.
  • 3.0 Observed several canned goods with price tags concealing the expiration date. Do not cover expiration dates.
  • NOTE: Observed several foods for sale beyond their expiration date, including but not limited to:
  • -popcorn 10/2009
  • -Combos 5/2010
  • -Planters 4/2010
  • -Pringles 10/2009
  • -Musselman Apple Sauce 3/2010
  • -Tomato Soup 1/2010
  • Check and rotate stock regularly.
