Purchased two hot holding units for soups used at two consistent catering locations.
Recommend purchasing a digital thermometer for thin foods.
Cambro carriers are provided for transporting foods.
COLD HOLDING- Pizza cooler had an ambient air temperature of 43.7°F. Pepperoni at 43.7°F. Maintain foods at 41°F and below. Service company will be contacted regarding the cooler.
  • 4.5/4.6- Dough sheeter is soiled. Clan and sanitize food contact surfaces to sight and touch.
  • 6.4- Replace missing floor tiles by the three compartment sink to facilitate cleaning.
  • 5.1- Drain inside the walk-in cooler has pooling water. Plumbing shall be in good repair.
  • Monitor seams on three compartment sink they appear to be rusting.
  • Discussed plans for pizza to be sold out of retail case. Complete ingredient label with name and address will be required.

Pork in walk in cooler, reportedly to be used for family, was cooling from yesterday at 43°F-44°F. Discussed not covering pork to cool more rapidly.

  • 4.1- Provide an accurate thermometer in the pizza reach-in cooler.
  • 4.2- Providie a chlorine and QAC test strip kits.
  • 6.4- Coat hanging on storage rack with single-use pans. Store employee personal items separate from food and equipment.
  • New walk-in cooler added in garage area with adequate lighting.

  • 3.4/4.4- Pizza reach-in cooler had an ambient air temperature of 43°F. Pepperoni on top at 47°F and cheese at 48°F. Potentially hazardous foods shall be held at 41°F and below. Reportedly new compressor was just added and cooler will be adjusted. Discard any contaminated foods.
  • C4.1- Provide an accurate thermometer in the reach-in cooer.
  • 4.2- Provide a chlorine test strip kit and a QAC color chart for QAC test kit.
  • 6.4- Replace missing tiles under the three compartment sink to facilitate cleaning.
  • 6.2- Replace burned out lights throughout.
  • 6.4- Purse store on counter next to food wrap. Store employee personal items separate from food and single-use items.
  • 6.4- Provide adequate pest control measures for flies.
  • 6.4- Ceiling tiles in storage area are water damaged. Replace tiles and any leaks.
  • 4.5- Clean the gaskets and bottom of the pizza cooler.
  • Notes: Walk-in cooler will reportedly be added. Walk-in cooler cannot be used for self service by customers if also used for catering and if customers have to walk thru storage areas.
