*3.2/4.4- Walk-in cooler which reportedly was replaced last week (condenser) had an ambient air temperature of 44.5°F. Maintain unit at 41°F and below to prevent bacteria growth of potentially hazardous foods. Reportedly cooler will be adjusted to 41°F and below.
Note: Current foods offered are prepackaged foods and coffee. Operation will be a risk level 2 for 2011-2012 license season.
Discussed complaint received by this office regarding outdate foods in the retail area.

4.6- Interior parts of the coffee machine were being cleaned in the food preparation sink. Food contact surfaces shall be washed, rinsed, and sanitized in the three compartment sink.
4.6/7.1/2.4- No sanitizer available. Provide an approved sanitizer for the three compartment sink. Sanitizers can either be bleach/chlorine or quaternary ammonium chloride. In addition provide the corresponding test strip kit.
6.2- No paper towels available at the hand wash sink. Provide an adequate supply of paper towels to facilitate proper hand washing.

5.1- Hand wash sink has the ice cream case stored in front of it. Keep the hand wash sink easily accessible to facilitate hand washing.
4.1- Provide an accurate thermometer in the sandwich cooler and walk-in cooler to assure 41°F or below is being maintained.
Thermometers were provided during this inspection.
4.5- The ice cream freeze has ice build up. Defrost this.
6.4- Restroom ceiling outside is falling in with exposed insulation and is filthy. Clean the restroom and make any necessary repairs.

5.1- Hand wash sink has a slicer on top of it. Keep the hand wash sink accessible to facilitate hand washing.

R4.1- Could not locate a thermometer in the walk-in cooler. Provide this.
6.4- Unused unnecessary equipment throughout. Remove equipment that will not be used in the operation.
Notes: New owner still organizing and cleaning store. Currently ceiling tiles and restroom being painted. A lot of equipment from old owner will reportedly not be used. In addition operation still only offering prepackaged foods and fountain beverages.
Operation will be a level two for 2011-2012 licensing year. This will be evaluated during the next inspection. Ice machine was locked and reportedly not used. Deli case turned on used for wine only. Reach-in cooler stored on top of table has been turned off and reportedly will be removed. Slush machine is moldy on the exterior but not in use. Clean and sanitize unit it going to be used in the future.
