--Food temperature measuring devices for ensuring proper food temperatures were not calibrated. Three of the four food probe thermometers provided read 24, 25, 28, compliance in a 32*F ice bath. All were calibrated during inspection. PREVIOUSLY CITED.
- Frequency of Cleaning Equipment Food Contact Surfaces and Utensils (46.712)
--Observed black slime residue present inside of the ice making unit. Ice was discarded, the interior was disassembled, cleaned, and sanitized during the inspection. Keep the unit on a more frequent cleaning schedule to maintain compliance.
