--Potentially Hazardous Foods prepared on site and held for more than 24 hours must be date labeled. Date labeling was observed to be sporatic for prepared foods. Correct labeling practices within 24 hours.

Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
--A thorough cleaning of cookline equipment, shelving, movable racks and flooring is needed. Areas were observed to soiled. Conduct a deep cleaning within 3 days. After talking with the owner, staffs "deep cleaning" schedule will be adjusted to a weekly schedule.
