--Goat cheese was found to have a surface temperature of 43 degrees F. Staffs were storing the product in the original manufacturer cardboard packaging. This is believed to have insulated the product elevating the temperature. The cooler in which the product was stored was measured to be 40 degrees F. Storage practices were changed on site. Product is now being stored "loose". Continue with this practice and monitoring potentially hazardous food temperatures daily.

--Observed a whole in the walk-in freezer left condensate pan. Ice was present on the floor and on pallets. Patch the whole or replace the drain pan. Correct within 7 days. Remove the accumulated ice.
