--Observed a mesh bag of onions stored directly on the floor in the walk-in cooler area, rather than 6 inches off of the floor as required. The onions were moved during this inspection.
Maintenance & Operation of Mechanical Warewashing Equipment (46.675(a)-(c))
--The final rinse gauge on the ware wash machine was inaccurate. The gauge was noted at 150 degrees F during this inspection. A temperature strip placed in the ware wash unit during this inspection noted the plate temperature at 160 degrees F.
