--Observed wet wiping cloths in prep area, not being stored in sanitizer solution. Demonstrated proper procedure for wiping cloth solution. Maintaitn throughout the calendar year.
- Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
--Potentially hazardous ready-to-eat food prepared in the food facility and held for more than 48 hours, located in the walk in cooler, is not being date marked. Please date label food products with preparation date when held for more than 48 hours.
- Equipment in Good Repair & Proper Adjustment (46.671)
--Sink stoppers located in the three bay sink are not properly sealing, hence washing solution and sanitizing solution can not be stored effectively in compartments. Obtain two properly working sink stoppers.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dust and debris. 1- Clean cieling fans located in restrooms, eliminate dust.
- Plumbing Facilities in Good Repair, Cross Connection Prohibited, Scheduled Inspections, Cleaning Water Reservoirs (46.825(b)-(e))
--Plumbing system not maintained in good repair 1- Observed the rinse wand leaking at the three bay sink. Eliminate leak 2- Observed piping leaking under the three bay sink causing the floor to be slippery and wet. Eliminate leak
- Cleanability of Floors, Walls, & Ceilings (46.921)
--The two public restrooms have a gap / crack in the caulking between the wall and the hand sink and is not a smooth, easily cleanable surface. Install a bead of silicone caulk to this area.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--A heavy accumulation of grease was found on the filters, walls and fire suppression lines of the ventilation hood. Obtain a recent cleaning sticker on the hood. Current sticker is dated 4-25-2012. That is too long. Ventilation hoods need to be serviced professionally every 6 months. THOROUGHLY CLEAN THESE SURFACES WITHIN SEVEN (7) DAYS AND MAINTAIN THEM IN CLEAN CONDITION WITH ROUTINE, THOROUGH CLEANING.
