--Observed Food Employee eating cut mellons on the cook line during the inspection. Inform all staff to eat in a designated area in the dining room. Food staff eating on the cook line is prohibited at all times. Inform all staff / Enforce through managerial team. Lidded drinks were observed on the cook line and is deemed acceptable.

--Raw chicken was stored above raw ready to eat cucumbers, squash, and zucchini. Tom re-organized the shelving unit during the inspection. Inform all staff / Enforce through managerial team. Refer to the provided CCHD cold hold storage chart.

--Food utensils for the hot hold rice observed stored in a container of water which is not maintained at 135°F. Staff was instructed to leave spoon on a plate, replace water every 2 hours or as needed.
