    --The following areas must be cleaned: 1. Produce Dept.: Soap dispenser at hand sink and wall around it. 2. Carry Out/Prepared Foods: Top of convection oven 3. Bakery: a) donut case interior b) donut topping containers - do not use cake containers. c) Floor under cake decorating table and table shelving.
  • Food Storage Requirements & Prohibited Areas (46.321)
    --Deli Cooler: Observed an open can of product in cooler. It was wrapped in plastic. Once opened, contents of can must be placed in a food grade container for storage to prevent contamination from can oxidation.
  • Design & Functionality of Warewashing Machines (46.591)
    --Prepared Foods: Dishwasher wash temperature gauge is not working properly. Gauge indicated water temp at 110F. Tap water was 125F+ - machine is reaching proper sanitizing temps but gauges do not reflect accurate temps. Repair or replace wash gauge.
