The Person in Charge did not demonstrate adequate knowledge of the PA Food Code by evidence of the risk factor violations noted during this inspection.

Food stained white employee apron observed as a cover for one container of raw processed vegetables inside the walk in cooler.

Plastic container observed without handles being used to dispense cooked rice in hot holding units in direct contact food ingredients.

Observed potentially hazardous foods , egg drop soup 82*F and hot and sour mushroom soup 83*F left in hot holding unit over night. One container of beef broth held on counter top 86 *F from the previous day. The phf's were not held 135 degrees F or above and were not cooled properly as required . Products discarded due to time temperature abuse.

Six raw eggs shell intact were found left out over night held at room temperature 84 degrees F, rather than 45 degrees F or below as required. Product discarded due to time temperature abuse.
