    --Observed deeply scored cutting boards not resurfaced or discarded as required in the grill and pizza areas. Repair or replace cutting boards.
  • Frequency of Cleaning Equipment Food Contact Surfaces and Utensils (46.712)
    --Noted an old food residue build up on the valves on the bottom of the steam jacked food kettles in the food prep area. Valves were cleaned and sanitized during this inspection.

    --Noted more than 20 drain or fruit flies on the walls, floors, ceiling around the dishwasher in the equipment wash area. Drain flies must be removed from this area.
