--Internal product temperature of cheese and trail bologna was at 55 degrees F rather than 41 degrees F or below as required. Items were sitting out on display table. Owner stated that he placed items there-3 1/2 hours ago. Items were placed within walk-in freezer to rapidly cool. Beef sticks from a USDA-inspected facility were being removed from vacuum package and placed into smaller bags. Directions state to refrigerate after opening. Items placed in refrigerator. Advised owner that package labels must be followed, and foods that require refrigeration be maintained under refrigeration.

--No sign or poster posted at the handwash sink to remind food employees to wash their hands.

--Food facility is not removing dead pests from control devices frequently, as evidenced by observed pest in control device within the dry storage area. Removed by PIC. There was no evidence of contamination of food, or food contact surfaces, in facility.
