--Food and ambient temperatures in the cook line low-boy refrigerator are 43*f. Shall maintain cold food at 41*f or below. The owner stated that the unit may be in the defrost cycle, rechecked ambient temperature was 40*f.

--Old food residue on the meat slicer blade, frame and blade guard. The slicer was disassembled and cleaned in the dishwasher.
- Handling Clean Items (46.775)
--Preset tableware is not wrapped, covered or inverted, or being removed at a frequency to assure tableware remains clean and sanitized.
- Surface Characteristics of Indoor Areas of Food Facilities (46.901)
--The linoleum, in front of the cook line stove, is ripped exposing the wood which is gouged. The area is not easily cleanable. Linoleum missing by the bar.
- Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
--The screen, on the kitchen exit door, is ripped and coming off the frame. The screen was duct taped as a temporary measure.
