--Large containers of sauces, prepared yesterday, were in the walk-in cooler and they were not cooled from 135°F to 70°F in 2 hours and/or from 135°F to 41°F within 6 hours, after preparation. They had internal temperatures of 50F and 75F. Discard the sauces immediately. Correct your cooling practices immediately.
- Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
--Observed sauces being cooled in large plastic containers with lids in walk-in cooler, which is not a proper cooling method. Cool sauces using the available ice wands, ice baths or by placing the sauces in shallow pans in the walk-in cooler.
- Storing Clean Items (46.774)
--Soiled knives are stored with clean knives in two knife racks. Clean and sanitize all of the knives and use the knife rack for the storage of clean knives.
- Cleaning Ventilation Systems (46.981(d))
--Documentation showing when the exhaust system, over the cooking equipment, was cleaned by a professional cleaning company could not be provided. Locate the documentation or contact the company and have them clean the system if it has been longer than six months.
- Controlling Pests, Removing Dead or Trapped Birds, Insects, Rodents and Pests (46.981(k)(l))
--Fruit flies were observed in the dish room and around the bar. Owner states that an extermination company treated the drains today for the flies. Continue to maintain the floors and floor drains in a clean condition and continue the treatments until all of the flies have been removed from the facility.
