--Observed containers/boxes of food stored on the walk-in cooler floor. Foods must be stored on approved shelving or dunnage racks a minimum of 6 inches off the floor. To protect product from contamination and to allow for easy cleaning correct within 7 days. Provide additional shelving or dunnage racks.
Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
--Observed containers of sausage and meatballs which beared no date labeling. Potentially hazardous foods held in cold storage must be labeled with a date prepared. Provide proper labeling. Correct immediately.
In-Use Utensils & Between Use Storage (46.302)
--Observed knives being stored between the hoagie bain marie and adjacent counters. Do not store utensils between equipment. Keep utensils stored on a cleanable surface (cutting board) or provide a magnetic/knife holder. Correct within 7 days.
