--The bottom section of the hot hold unit at the hot foods area has an ambient air temp. at approx. 91*F. The traditional rotisserie chicken in this bottom section of the hot hold unit has an internal temp. at 139*F. The items in this bottom section were cooked this morning approx. two hours prior to this inspection.
