    Frozen sausage being thawed using an unapproved method. Food observed thawing at room temperature on the wheeled cart in the food prep room.

    Chemicals were stored above or on the same shelf with food, equipment, and/or single service articles in the food prep area.Removed
  • Preventing Cross-Contamination of Packaged and Unpackaged Food by Separation, Packaging & Segregation (46.281)
    Cracked raw shell eggs and paper wrapped raw sausage store on top of RTE foods in containers in the upper portion of the sandwich unit. Care must be taken prevent cross contamination between raw and Ready-to-eat foods. Suggested that the grillside sandwich unit be divided in the A.M. to accomidate the breakfast menu.
  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    House-made soup and gravy was held at 125 and 130 degrees F rather than 135 degrees F or above as required. The thermostat knobs for the hot holding unit have no temperature markings and as such are difficlt to set without regular monitoring of unit. Thermostat was elevated and PIC states that internal product temperatures will be monitored.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    The Breakfast items noted above ( eggs, sausage etc had internal product temperatures of 50* F as they were well above the safe load limit of the sandwich unit. All items were removed to the walk-in cooler.
  • Ventilation Hood System Drip Prevention (46.581)
    there are two non-shielded light bulbs in ceiling fixture above the pizza oven.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    dUST BUILD-UP ON THE FAN GUARDS OF THE OVERHEAD REFRIGERATION UNIT IN THE WALK-IN COOLER.

Thus is my family and I fav place to eat. The food and service us great. And the owner donates money to good causes often.
