--Food was held at 50-53°F in the retail cooler rather than 41°F or below as required. hoagies 53*F, cooked ham 51*F, ham salad 50*F. All PHF discarded. See disposal. Also, cooler temp was adjusted and at last check was at 41*F. Lori stated that she will monitor it for at least a day prior to placing any PHF back inside.

--Commercially processed ready to eat food (deli meats & cheeses) located in the deli case and held more than 48 hours is not being marked with the date they were opened. A chart WAS being kept, but October was the last time anything was documented. Known dates were implemented during the inspection. Keep date marking enforced to ensure compliance.

--Noted water dripping and pooling on the floor in the walk-in cooler from the condenser unit. Keep water away from affected area until repaired.

--Observed dust buildup on the fan screens in coolers (i.e. walk-in cooler).

--Water is leaking out of the hot water tank onto the floor. Keep contained until repaired.

--Observed the metal floor in the walk-in cooler is rusted through with sections peeled up. Repair so that floor is nonabsorbent & cleanable. Previously cited.
