Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Improper Ice Baths. Salad dressings and cut tomatoes were observed to be improperly iced bathed and had elevated temperatures 42+ degrees F. Sliced tomato ice bath adjusted on site. Additional ice and water added to larger pan. Keep ice at or above product levels. Salad dressings were stored in an unapproved ice bath. Salad dressing were placed in the salad bar drop in cold pan. Maintain all potentially hazardous foods at 41 degrees F or above.
Certified Food Manager (CFM)
--No full time Chester County Certfiied Food Manager. Within 20 days a full time staff must be enrolled in an approved Certified Food Manager Course. Course must be completed within 90 days.
