    Lower seal on Delfield freezer was found to be damaged. Repair/Replace.

    Hand sink located next to drive though window was found have ice dumped in it.  Hand sinks are for hand washing only.  Prep and dump sinks must be separate from hand sinks.
    Lavatories shall be accessible to employees at all times.

    No Certified Food Service Sanitation Manager was present during inspection.
    A certified food service sanitation manager shall be present on the premises at all times potentially hazardous food is being handled.

A final inspection was conducted for front of house remodel, which included bathrooms and front counter.  Bathrooms have running water, hand sinks have hot and cold running water.  approved to operate front of the house.  Clean and sanitize food contact surfaces on a routine basis.  Barrier wall separating kitchen and dinning room may be removed.

This inspection is conducted to inspect the wall constructed between the dining room and the kitchen.

The dining room and restrooms are being remodeled.  A wall has been constructed between the dining room and the kitchen to prevent contamination from the construction debris which will allow the drive thru to remain open.

Establishment has been approved to operate the drive thru during the remodel.

Food Handler Training:  All employees are trained using Arby's Inhouse food handler training.  New hires go though the training the first week of work and test the same week.

Manager informed inspector that a remodel will be taking place sometime next month (Feb).  A plan review and final inspection will be required.  Call 679-6161 and speak to Corine for more information if a plan review has not yet been submitted.
  • Food contact surfaces designed, constructed, maintained, installed, located.
    Lid to container with Onions and Peppers located in Walk in cooler was found to be cracked and damaged.  Replace.
    Multi-use equipment and utensils shall be made and repaired with safe, non-toxic materials, including finishing materials that are corrosion resistant, non-absorbent, smooth, easily cleanable, and durable under conditions of normal use.
  • Food contact surfaces of equipment and utensils clean
    Interior of cook line cooler was found to be soiled.  Clean and sanitize on a routine basis to ensure food safety.
  • Non-food contact surfaces clean
    Interior of Delford freezer was found to be soiled.  Clean and sanitize on a routine basis to ensure proper food safety.

    Floor under front line left cabinet was found to be heavily soiled.  Clean and maintain debris free.

    Ceiling tile above ice machine has water damage and is in disrepair. Replace.

All food handlers within a restaurant, who do not currently have their food service sanitation manager certification, are required to take a 2 hour online training course by January 1, 2014. The course information can be found on our website www.pcchd.org On the right side of the screen, under the heading "Recently Updated Pages", click on "Food Protection Program" and this will take you to the page that has all of the course options. Once each employee has this training completed, print the certificate out and have these available during any inspections starting in 2015.
  • Single service items properly stored, handled, dispensed
    Two stacks of single-service containers, located on the top shelf of the prep area are not being stored correctly. To protect the food-contact surface, invert these containers. The containers have been turned over.
  • Critical: Outer openings protected from insects, rodent proof
    The back door to the establishment has daylight present and one side of the sweep is torn. Protect all outer openings from the entrance of insects and/or rodents. Replace this sweep so daylight is no longer present under this door. A recheck will occur on or after 10/23/14.
  • Floors properly constructed, clean, drained
    The floor located below two of the cabinets near the cash register area, where a compressor is located and below the Pepsi cooler is soiled. Maintain all floors clean. Clean these areas.
  • Walls, ceilings, and attached equipment, properly constructed, clean
    1) The area around the light on the ceiling of the walk-in cooler is soiled. 2) The computer monitors attached to the ceiling in the kitchen prep area are soiled. 3) The covers for the ventilation fans in the men's and women's restrooms are soiled. Maintain all ceilings and attached equipment clean. Clean these areas.
  • Lighting provided as required. Fixtures shielded
    The light in the vent hood above the ovens is burnt out. Provide adequate lighting in this area. Replace the light.

  • Critical: Cold food at proper temperatures during storage, display, service, transport, and cold holding
    Container of cut tomato in the walk in cooler did not bare a date or day they were made.
    Spoke to the worker who stated they were made this morning.
    Corrected by the worker marking the tomato with today dated
    Foods in containers or packages shall be marked with the date or day they were prepared.
  • Non-food contact surfaces clean
    The brown bin in the cooler behind the front counter where the whip cream toping is kept is soiled.
    Clean, sanitizer and maintain clean all non-food contact surfaces.
    Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.
  • Floors properly constructed, clean, drained
    The floor is soiled around the back legs of the racks in the walk in cooler and in the corners of the walk in cooler. The floor has some debris on it under the main prep line.
    Clean and maintain clean floors.
    Floors, floor coverings, mats, and duckboard shall be maintained clean.

. Complaint investigation 14-0065 Roof was leaking and running down the wall to the electrical box and pooling on the floor.

The roof in the back of the kitchen above electrical switch boxes has a excessive leak. The leak is not effecting any food preparations or contaminating any food equipment. However, the leak may potentially effect the entire establishments electrical supply. Code enforcement was contacted and Dan Morano a code enforcement officer spoke to the manager. According to the manager, Dan said that they must contact a electrician or contractor and have the leak evaluated. At this time the only violations are a leak in the ceiling, the light in the dry storage area is not working and that the excessive water from the leak is pooling. All these are minor violations but the potential for the entire building to be effected is there and also there is a huge safety issue with an employee becoming harmed.

It is highly recommended to avoid walk in this area and do not touch the electrical panels.  

The manager contacted Over Lander contracting company and they are coming out today.

If the coolers do become effected food in them will be required to be discarded if out of the proper temperature.
