    The vent on the ceiling of the mens restroom is soiled. Maintain all ceilings clean. Clean this area.

Note: Discussed holding times of the meat balls. Manager stated they are held for quality for 4 hours. Discussed with manager about routinely stirring the meat balls for uniform temperatures through out the pan.

    Corrected by the manager having an employee clean the racks in the walk in cooler

    The floor is soiled along the base boards under the dry racks. Also soiled between the oven and the counter up front.
    Clean and maintain clean floors.
    Floors, floor coverings, mats, and duckboard shall be maintained clean.

Prelim conducted 3/23/12. Equipment is operational. All food contact surfaces have been washed and sanitized. Due to a shipment coming later in the day, the walk in cooler, walk in freezer, and dry storage room will be stocked. Ensure that all food items are protected from any contamination and is stored at least 6 inches above floor. Recommended that all food contact surfaces be re washed and sanitized before being stocked with food items.

Final inspection is set for 3/26/12.

-Clean floor and other non food contact surfaces as well as food contact surfaces.
No violation noted during this evaluation.
