HACCP: Discussed Gyro cooking procedure. Continuously cooked gyro slicing off and placing into the cooler as it cooks.
Sanitizer use is Chlorine.
- Potentially hazardous foods properly thawed
Observed a container of frozen steak in a larger container with water intended to thaw out the steak. Discussed with the employee on duty about proper thawing procedures and steak was placed into the prep cooler. Potentially hazardous foods shall be properly thawed by one of the following methods: in refrigerated units, under potable running water that is less than 70F, in a microwave, or as part of the conventional cooking process.
- In-use food dispensing utensils properly stored.
Spoon in the chicken flavor base was being stored touching the product. Corrected by removing the spoon. Between uses during service, dispensing and incidental utensils shall be stored: in the food with handle extended out of the food, in running potable water dipper wells or clean and dry.
- Food contact surfaces designed, constructed, maintained, installed, located.
The lid of the deep freezer is in disrepair. Replace the lid of the deep freezer. No food contact surfaces shall be maintain in good repair.
- Food contact surfaces of equipment and utensils clean
The ice baffle of the ice machine is soiled. Clean and sanitize food contact surfaces routinely. Kitchenware and food-contact surfaces of equipment shall be washed, rinsed, and sanitized after each use and following any interruption of operations during which time contamination may have occurred.

No papertowels at either handsink. No soap at front serving area handsink. Men's restroom door does not self-close all the way. A supply of sanitary towels or a hand-drying device providing heated air shall be conveniently located near each lavatory. A supply of hand-cleansing soap or detergent shall be available at each lavatory.

Walls in storage room/ice machine/mop room painted dark red. Trim missing from left side of door causing holes to be exposed in walls. Paint walls from door to ice machine to mopsink to door to kitchen a light color.
- Premises maintained fee of litter, unnecessary articles. Cleaning and maintaining equipment properly stored, kitchen restricted to authorized personnel
