NOTE: This inspection was conducted in accordance with NJ State Food Code. Facility is under new food service provider, Aramark Corp.
ITEM #22: Observed sandwiches; tuna, roastbeef, etc., on tray in deli area not being maintained under cold holding temperatures. Discussed with chef that SOP for holding potentially hazardoud food (PHF) items at room temperature must be approved by SCDOH. Chef advised he will provide documentation of policy at next inspection.
ITEM #45: No sanitizer test strips provided to measure sanitizer concentration levels. Sanitizer test strips shall be provided to monitor sanitizer levels.
NOTE: Bakery area in kitchen and equipment in this area will not be used. Area will be closed.
NOTE: 3 Bay-sink area in kitchen under construction and being repaired.
