Ensure potentially hazardous food items are stored properly (Chicken/eggs on bottom; meat; seafood above meat and vegetables on top). *Ensure items are properly stored within 48 hours; 02/28/16; to reduce the probability of cross contamination.-Observed open box of tiramisu; ice cream with the lid off; open cakes and other open items in the walk in frezer among shrimp and other meats.*Open dessert items were discarded during the inspection.*Ensure food items are protected and organized within 48 hours; 02/28/16; to reduce contamination.

General Comments that relate to this Inspection Notes: Discussed hand washing policy and sick policy. Ensure employees sick with vomiting; diarrhea; jaundice stay out for 48 hours after symptoms stop.-Hot holding temperatures good. All above 150F.-Cold holding temperatures good. All below 40F.-Cooling procedure discuused and good.-Cooking temperatures good. Steak 160F.-Facility has no shell fish.-Food advisory is posted on menu.-Cutting boards; knives and utensils good.-Facility was not doing ROP during the inspection.-Dishwasher at 190F. Rinse termp good.-Facility has CFPM and will provide info to WCHD on 02/29/16.-Facility had one employee that was ill and the chef sent home before inspection.In addition to the CFPM listed above the following individuals have CFPM certificates:Anthony BecerraPete DelicinoPer head chef no individuals have taken the CFPM exam and failed the exam within the past year.

General Comments that relate to this Inspection **Raw advisory printed at front door highly recommend posting on menus.Reviewed no bare hand contact with ready to eat foodFacility has submitted a HACCP Plan for approval of ROP of raw meat. Facility is currently dating items and facility is allowed to continue this process while HACCP Plan is being reviewed. Serve stations ok. Correct the following:1.Replace caulking on right side of door to the dining area from kitchen on FRP wall.2. Post all hand wash signs on hand wash sinks.3. All refrigerators <=41F. 4. Food walk-in freezer frozen. 5. Need to cover heating unit in threshold into walk in freezer.6. Replace gaskets on walk in cooler (WI -10).7. Observe water accumulating in drawer coolers along cook line area - clean water and clean out drain lines.8. Raise drain pipes off floor under steamer for proper cleaning and to have proper air gap. 9. Under oven and flat top floor for concrete in need of repair. Maintenance staff stated equipment will be removed from this area. All floors need to be in good repair and sealed.10. Replace all bulbs that are burned out under hood areas in main line cook line and pizza area. 11. Clean all dusty; dirty and broken ceiling tiles. Remove all dust on ceiling vents12. Seal holes in stainless steel wall covering in salad plating area13. Deep clean all floor hand sink14. remove all unused equipment Ensure all floors are deep cleaned including under sinks; cookk lines and cold holding units.
