[2] Food protected during storage; preparation; display; service; transportation Observed buildup of dust and grime on compressor fans and ceiling of produce walk in cooler with open produce below. Clean fans; fan grates; and ceiling regularly to prevent food contamination. Observed several personal items being stored in dry food storage area; including open personal foods. Remove personal items from storage area and keep seperated to prevent contamination.
[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized -Observed dried ground meat on a lower shelf and on meat grinding equipment in the "butcher shop" area of the warehouse. No 3 compartment sink or dishwasher is located in the area. A mop sink is located directly next to the band saw and meat grinder. A handsink in the area did not have soap. Facility also has packaged bread stored on racks directly next to butcher shop area.*This area being used as a butcher shop is not appropriate and has extremely high potential for cross contamination. Butcher shop in the warehouse was red tagged during the inspection and meat may not be cut or prepared in this area.*This area was cleaned during inspection. *Facility must follow up with WCHD as to where the meat cutting and grinding operation will take place and how this issue is being addressed. If meat preparation is observed in this area in the future without approval all permits with products that could be contaminated by this operation will be suspended.
