[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized -Dishwasher did not have a detectable limit of sanitizer. Facility must wash bar dishes in the restaurant dishwasher or restaurant 3 compartment sink until the bar dishwasher is sanitizing properly. *Ensure bar dishwasher is sanitizing dishes with a sanitizer concentration of 50-100 ppm chlorine within 48 hours; 05/07/15; to prevent cross contamination.
[1] Wiping clothes: clean; use restricted -No sanitizer buckets were set up for use at the bar. Ensure wiping cloths with sanitizer are used to reduce contamination. Corrected on site.
[1] Installed; maintained -Observed a leak under the hand sink at the hot water shut off valve. Ensure leak is fixed within 7 days; 05/12/15; to ensure facility is maintained.
[2] Toilet rooms: self closing doors; fixtures maintained; clean; hand soap/drying devices provided; proper waste receptacle -Handsink did not have paper towels. Ensure paper towels are provided at the handsink to allow proper hand washing within 48 hours; 05/07/15.*Employees are using paper towels at the dumpsink until paper towels are provided at the handsink.
General Comments that relate to this Inspection Notes:-Discussed hand washing policy and employee sick policy. Ensure employees sick with gastrointestinal symptoms ie. vomiting; diarrhea; jaundice; stay out of work at least 48 hours after symptoms have stopped.-Restrooms clean and stocked.-No signs of pests or vermin.-Reach in coolers at 30F and 40F. Bottled product only.-Facility had separate dump sink.-Observed separate ice for customers and good scoop storage.
