NOTES:- All handwasning sinks were stocked and operational.- Temperatures of refrigeration equipment containing potentially hazardous foods were within regulation.- Sanitizer tested 100ppm in the sanitizer wipe down bucket and 100ppm in the dish machine. As a reminder makeup and keep chlorine bleach based sanitizers between 50-100ppm.- Alcohol warning for pregnant women was posted as required.

1) Observed an open tin can of tomato juice on the top shelf of the walk-in cooler. Once tin cans with liquid contents are opened to the atmosphere; the contents must be immediately used or transferred to a food grade (stainless steel or plastic) container to prevent the leaching of metals from the can into the food.2) All food items must be stored a minimum of 6" off the floor for ease of cleaning and to prevent contamination. Relocate the bottom shelf in the walk-in cooler to a minimum of 6" off the floor.
