Note: This facility is licensed as a Risk level 1. Facility is receiving food from a licensed facility and immediately serving hot or cold. Doing this would make the operation a risk level 2. The facility has a main kitchen/ storage area along with 5 classrooms with kitchens in each. Each of these classrooms have non-commercial microwaves, refrigerators and dish machines. PIC stated the dish machine in each room is used to clean the students dishes (bowls, cups, utensils etc.). They also provide/ cook food for substitutes using the microwave. Some of the food preparation techniques would classify this operation as a Risk level 3. According to Tamara this facility has been licensed as a Risk level 1 for six years. Before the Risk Class of this facility is changed it will discussed with my supervisor and the State Health Department.

After thorough discussion it has been decided that the facility is going to be upgraded to minimum of a Risk Level 2. A profile form will be submitted increasing the Risk level. Risk level change will begin at the beginning of next licensing year (3/1/2012).
For the facility to be in compliance they must provide a 3-compartment sink in facility for proper dish washing. All dish machines must be replaced with commercial grade dish machines. Non-commercial microwaves must be removed from classrooms. Non-commercial refrigerators must be replaced with commercial grade.
The facility could also decide to become a risk level 2 and not have to put in 3-comp sink and commercial dish machines if they decide to send all utensils and equipment back with the caterer. That includes all cups and serving utensils.
The facility is going to decide what the plan of action is and will be in contact with the Health Department within a couple of weeks.
