Hand washing sinks were fully stocked with soap and paper towels.

Cold foods were held below 41 degrees F/ Hot foods were maintained above 135 degrees F. Foods are cooing in small shallow pans in the cooler, freezer or in an ice bath.
VIII. Date Marking/Time as a Public Health Control
Observed multiple items in the upright refrigeration unit not properly date marked. Rice, potato salad and gravy made 1-3 days prior had date stickers on them from 9/25-10/14. Food was properly date marked at time of inspection. Must ensure all TTCS foods held refrigerated for more than 24 hours are properly date marked to ensure the food is used or discarded within 7 days.
