Discussed cooling, reheating and making of cole slaw and jambalaya rice. It is important to monitor the temperatures of these foods to ensure that they cool properly. Reviewed cooling procedures with the manager.
Best practices observed today: The manager was aware of how to properly calibrate a thermometer, cold holding/ hot holding temperatures, and how to handle the food inside a malfunctioning cooler to ensure food safety.
