Please obtain soap for bar. All other hand sinks were stocked appropriately.

All managers are Serv Safe certified. Person in charge was able to accurately answer questions related to food safety.

Note: Hand washing sink at bar needs hand soap. Observed servers washing hands after handling dirty dishes.

Note: Most of the foods come in fresh, otherwise foods are thawed inside cooler.

Note: Temperatures were not in compliance. Observed several items holding above 41 F in the refrigeration drawers located in the kitchen.
Recommended Actions:
a) Replace/repair gaskets on the refrigeration drawers. Observed several of them are torn or ripped. This can prevent the unit from holding proper temperatures.
b) Observed temperature logs are not being kept on a consistent basis. It is recommended that temperature logs are kept daily and that temperatures are taken twice daily.
c) Please do not use the unit until it is properly repaired. After repaired, please continue to monitor

Jan 17, 2012Follow up inspection conducted to check on the chemical sanitizer in all of the dish machines. Please continue to monitor the sanitizer solution in all of the dish machines. Observed no critical violations today.
