- 229.163 (h)- before handling. Observed an employee fail to wash hands before putting on gloves and handling ready to eat food. Prior to putting on gloves employees must wash their hands.
- 229.164 (o) (7) (B) consume by date (pkgd). Turkey, ham, and hot dog wieners in various refrigeration units were not adequately date labeled after being removed from their respective packages. Refrigerated, ready to eat, potentially hazardous food prepared and packaged by a food processing plant must be marked with a consume by date or date indicating when the item was removed from its original package. Refrigerated, ready to eat, potentially hazardous food prepared and packaged by a food processing plant can only be held a maximum of 7 days after its original packaging is compromised provided it is held at 41 degrees F or below. The manager on duty indicated that said items were removed from their original packages on 03/19/11 so the establishment is allowed to keep these items provided they properly date label them and use them by 03/27/11.

At time of inspection this door was propped open. This door must be removed within 10 days or another hand washing sink must be installed in kitchen and ware washing areas. Failure to make necessary corrections will result in the establishment being scheduled for a reinspection and the owner being charged a reinspection fee.
