229.164 (o) (6) (B) (i). Potentially hazardous foods must be maintained at or below 41 degrees Fahrenheit. Items in the deli display unit top shelves were above 55 degrees F or more. An assessment of the unit found the grid for directing the air flow was not installed properly. Placing this grid in the proper direction brought the temperature on the top shelves back to 41 or less. Deli meat totaling approximately 61 lbs was discarded.
