Proper cooling methods include portioning hot food and placing it in ice bath container, stir constantly until food temperature is brought to 70 degrees F within 2 hours.
  • Observed employee handle food with bare hands. Bare hand documentation was not provided. Ensure document is provided with the following; 1. Two barriers will be used when handling food with bare hands (double hand wash, and hand sanitizer). 2. Corrective action will occur if employees fail to follow procedure. (discard food handled improperly, re-train employees). 3. Signatures from all employees acknowledging policy and corrective measures.
