Proper cooling methods include portioning hot food and placing it in ice bath container, stir constantly until food temperature is brought to 70 degrees F within 2 hours.
- Observed employee handle food with bare hands. Bare hand documentation was not provided. Ensure document is provided with the following; 1. Two barriers will be used when handling food with bare hands (double hand wash, and hand sanitizer). 2. Corrective action will occur if employees fail to follow procedure.
