- Cooler where condiments are displayed such as cut strawberries, and mango was reading a cold hold temperature above 41 degrees F; 46 degrees F. Ensure that all potentially hazardous ready to eat food are at a temperature of 41 degrees F or below
- Observed employee cutting strawbeeries with out using a proper barrier such as gloves, or utensils. Ensure that a physical barrier is used when handling ready to eat foods.
- Hot water at hand wash sink and 3 compartment sink were not proper hot water temperature. Hand wash sink-93 degrees F and 3 compartment sink 104 degrees F. Hand sink must provide hot water of at least 100 degrees through the use of a mixing valve or combination faucet. 3 compartment sink should be at least 110 degrees F.
- Hand wash sink was not accessible during the inspection. A small stool was in front of the hand wash sink and a sanitizer bucket was in the hand wash sink during the inspection. Handwashing facility must be fully accessible at all times for employee use. There can be no barriers and this sink can be used for handwashing only.
- 229.167 (e) (3) (A) no towels. There were no paper towels at the hand wash sink/ Supply the handwash station with individual disposable paper towels.
