Items in hot hold unit were measured below 135 degrees Fahrehheit. Discarded under a pound of various foods. The unit temperature control was adjusted up. Units ambient temperature was measured at 150 F. There is an option to place a time marker on the items to indcate a time 4 hours after being placed off temperature. The food must be discarded after 4 hours.
