HOT WATER SUPPLY IS NOT AVAILABLE AT THE KITCHEN HAND SINK.
OBSERVE AN ACCUMULATION OF DEBRIS UNDERNEATH HARD TO REACH AREAS BELOW SHELVING UNITS.
OBSERVED COOK HANDLE RAW SAUSAGE, CRACK EGGS, WIPE HANDS ON WIPING TOWEL AND WIPE IN-USE KNIVES ON WIPING TOWEL AND CONTINUE WITH DUTIES WITHOUT WASHING HANDS.
POTENTIALLY HAZARDOUS FOODS (PHF'S) AT TOP PREP UNIT AND IN DRAWERS WERE OVERLOADED SLICED TOMATOES, CHICKEN, FRIED STEAK, SAUSAGE AND PORTIONED PASTRAMI IN THE DRAWERS WERE FOUND ABOVE 41F. ALSO, THE MASH POTATOES IN THE PLASTIC POUCH MEASURED ONLY 100F INSIDE THE HOT HOLDING UNIT.
