  • DISCONTINUE RINSING UTENSILS AFTER SANITIZING IN BAR. THE CORRECT METHOD IS WASH-RINSE-SANITIZE. THE BAR EMPLOYEE WAS USING A WASH-SANITIZE-RINSE METHOD.
  • MAINTAIN EMPLOYEE ILLNESS LOG WITH SYMPTOMS IDENTIFIED. BRENDON INDICATED THAT RECORDS ARE KEPT WHEN EMPLOYEES ARE ILL, BUT NO SYMPTOMS ARE LOGGED. TEMPLATE EMPLOYEE ILLNESS LOG IS ENCLOSED.

  • OBSERVED FOOD EMPLOYEE QUICKLY DIP FOOD EQUIPMENT IN SANITIZE COMPARTMENT, INSTEAD OF SUBMERGING FOR 30 SECONDS (FOR QUAT).
  • OBSERVED NO DATEMARKING FOR OPEN PACKAGE OF SLICED HAM IN BAR THAT HAS BEEN HELD LONGER THAN 24 HOURS AFTER OPENED.
  • POST COPY OF STATE CFM CERTIFICATE IN CONSPICUOUS LOCATION (IE. KITCHEN AREA) IN HIGHLAND BUILDING. NO CERTIFICATE OBSERVED.
  • PROVIDE A QUAT CONCENTRATION OF 200-400 PPM. OBSERVED A CONCENTRATION OVER 400 PPM FOR BAR CLOTH BUCKET AND APPROXIMATELY 100 PPM FOR 2ND KITCHEN 3-COMP SINK.
  • PROVIDE ACCURATE THERMOMETER FOR GLASS DISPLAY REFRIGERATION UNIT WHERE WRAPS ARE LOCATED. THERMOMETER READ 30 DEGREES F DURING INSPECTION. ACTUAL TEMP WAS 42 DEGREES F.
