- Critical: TCS foods were not being held at the proper temperature. -Observed food in the pizza prep table holding at 56F.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less. -Person in charge stated the refrigerator had been serviced earlier in the day. Food had been in the pizza prep table less than 4 hours. Food was moved to a refrigerator holding below 41F. Service company was contacted.

- Critical: Observed a cross connection between the drinking water system and a nondrinking water system. -Observed sink sprayer hanging below the rim of the 3-compartment ink. Observed a hose with no backflow device attached to the utility sink faucet, with the hose inside the sink basin.
A person may not create a cross connection by connecting a pipe or conduit between the drinking water system and a nondrinking water system or a water system of unknown quality, and the piping of a nondrinking water system shall be durably identified so that it is readily distinguishable from piping that carries drinking water. -Repair sprayer spring so that the sprayer stays above the sink. Install a backflow device or keep the hose disconnected from the utility sink faucet. During inspection, hoses were moved out of the sink basins to eliminate the cross connections.
