- Observed accumulation of soil residue on nonfood-contact surfaces. Observed accumulation of debris on metal shelving above sink and dry storage area, also accumulation of food debris underneath prep sink by the bulk ice bin.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
- Observed an improperly cleaned storage area for refuse, recyclables, or returnables. Observed bags of rice and other food debris outside of dumpster.
A storage area and enclosure for refuse, recyclables, or returnables shall be maintained clean and free of unnecessary items. Keep refuse area clean and free of litter to deter possible pests.
- The physical facilities are not being maintained in good repair. Grease trap lid on floor near 3 compartment sink is neither smooth nor easily cleanable. Also observed missing coving near 3 comp sink.
The physical facilities shall be maintained in good repair. Replace/ repair grease trap lid to provide a flush surface that is both smooth and easily cleanable and replace missing coving.
