All products began cooling at 9AM; active cooling began at 9:30AM per operator. Currently 3PM, 5 1/2 hours later, and products are just now reaching 70F. Unable to salvage product.
  • No plan review submitted and renovations in progress. Hand sink has been replaced by ice machine over the years. No conveniently located hand sink for server area or ice machine.

Will now hot hold bean meat.
