  • Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth in reach in freezer. Corrective action taken: cook removed from reach in freezer.
  • Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. 0 ppm in kitchen.
  • Basic - Wiping cloth sanitizing solution stored on the floor. Corrective action taken: operator placed bucket 6 inches off floor.
  • High Priority - Employee failed to wash hands before putting on gloves to work with food. Observed cook change gloves with no hand wash. Corrective action taken: cook washed hands and put on a new pair of gloves.

Observed server at bar clean teeth and then go touch clean surface. Corrective action taken: server washed hands.

Establishment has no approved Alternative Operating Procedure. Observed server at bar cutting limes with bare hand. Corrective action taken: food handler washed hands and put on new gloves.

  • High Priority - Reduced oxygen packaged fish packaged onsite no longer frozen and not removed from reduced oxygen package. Observed 2 filets of salmon 41f in grill reach in cooler sealed and completely thawed. Advised operator to cut a hole in vacuum packaging.
