Establishment advertises white tuna on menu, sushi chef stated they used Escloar for white tuna. When asked to show which fish in freezer they use for white tuna sushi chef gave inspector fish in original package labeled Escloar. Viewed invoices from KGI Trading dated 3/17/14 and 4/21/14 which showed purchase of Escolar. **Admin Complaint** Upon post final order callback on 9/15/14, observed frozen Escolar in Reach-in freezer (still in original package) and thawed escolar in reach-in cooler (in sushi bar, per sushi chef). Sushi chef stated escolar was his own personal fish, however fish was wrapped and placed on similar display plates other fish used for sushi. Several menus still advertise white tuna (to go menu and sushi bar menu). One menu has been updated with the removal of escolar. Operator unable to provide the last 90 days of invoices to confirm purchases of fish.
