Like other interstates in the country, it jiggles a little! It does go mostly south from Phoenix to Tucson but then heads off mostly east.

I did the same from Ohio. Went south from Albuquerque and west south of Tucson then north to Phoenix. I don't remember any mountains.

I am moving to Pheonix for school in a few months. My family and I went to Florida and Appalachian Mountains and Foothills freaked me out from Kentucky all the way to Atlanta. I was able to drive from Atlanta to Florida, but the rest of the time I had my head buried in my laptop and hand clinched around my seatbelt. Problem is My car has to get to Pheonix so I can make it back and forth to school. I may have to drive :/

Yes, I-25/I-40 is not "mountainous". Unless one is literally making mountains out of mole hills.

Anyway, answer is .....I-10 to Las Cruces then US 70 over to Alamogordo, north on US 54
north past Carrizozo, and meet up with I -40 near Santa Rosa, then head
east on I-40 to Oklahoma City, continue east east/NE on I -44 to St.Louis, cross the mighty
Mississippi then you're in Illinois, no problem.
