I just made a simple breakfast that took only minutes. Eggs, bread, coffee, not too bad.
You are well on your way. Good for you! Cooking at home is a habit, and I think we all know that establishing new habits can be very difficult, but if you stick with it, and it will soon be old hat.

2x / week is pretty common for single folks to cook.
Oatmeal / casseroles / main dishes / soups
Daily I will cook Eggs / green salads / burritos / fruit.
Costco Chicken really helps keep the food prep time lower. (Cut up and use in salads and burritos and Sandwiches), use it for a week's worth of soup as well! ~ 12 - 20 servings of some type. Still freeze a Qt baggy of Chicken for my next soup / casserole.
Crock pot for ribs / roast,
BBQ a turkey on Weber every 2 months.
BBQ Salmon (Steelhead) 1/ week
Salmon Chowder in winter.
Homemade Icecream on Sunday nights in Summer.
Potlucks every 3rd Sunday
But... I really dislike making salads!
Costco Power Greens helps with that task, but is spendy and TOO much QTY for singles.
I freeze 1/3 of the Power Greens for stir-fry and omelets.
I find it easier to cook when you invite someone over. But I frequently will prepare and take to local senior citizens living solo in the country.
All on <$100 / month food and entertainment budget.
When I was alone, I would cook a complete main dish for 4-5 people, and eat the leftovers until it was gone, which would last 4-5 days. Most days, I would just need to reheat.
I usually cook some sort of meat in a pot or frying-pan.....that is the extent of my "cooking".
And yes, as a grubby Bachelordude, I do eat out of whatever I used to cook my meal in, cleanup is too simple.
