I now have both recipes memorized. They both have been EXCELLENT at helping me use up those Covid-19 panic food purchases. I went through our canned black beans and am on to using the dry beans. Super simple... 3/4 cup of dry beans, 2 cups of water and some salt in a mini crockpot. Wait 3 hours. Continue with recipe, but double the spices. Grind some cheese and you've got vegetarian "chipotle".

I imagine our burritos cost about $2 each.

To answer the question: Yes, a $10 or $15 burrito is too expensive. Most of the time...
Thanks for the links. I enjoy the wide variety of flavors they offer. I do beans in the instant pot, and home made tortillas on the tortilla press. Was just thinking of making Mexican rice to go with it, but maybe I'll try this cilantro lime rice instead. Looks really good!
