Hillside is Central, NJ but can be partially debated as part of its boundaries go over rt. 78.

If one believed in a central Jersey, honestly, it would be New Brunswick to Trenton. South of Trenton is South Jersey.

I am with you on the first half. New Brunswick/Piscataway is the start of Central, on the west of part of the states it goes down to Trenton, on the shore part it goes down to Point Pleasant.
